Eva Thiessen hatte ein großes Herz und dachte immer zuerst an ihre Familie. Sie zeigte ihre Liebe besonders durch das Kochen. Ihr Kopf war immer voller Rezepte, Ideen und neuer Wege, wie man ein Essen noch besser machen kann. Auch nachdem sie sich im Oktober 2024 das Bein gebrochen hatte und viel sitzen musste, hörte sie nicht damit auf. Von ihrem Stuhl aus sagte sie uns weiter, welche Gewürze wir nehmen sollen und wie es am besten schmeckt. Kochen war für sie mehr als nur Essen machen – es war ihre Art, uns Liebe zu zeigen.
Eva lebte viele Jahre mit ihrem Ehemann und ihren Kindern in Mexiko. Vor acht Jahren zogen sie nach Elkhart, Kansas, und sie hat sich dort sehr wohlgefühlt. Sie liebte es, Zeit mit ihrer Familie zu verbringen, Ausflüge zu machen und gemeinsam etwas zu unternehmen. Besonders freute sie sich auf die Samstagabende – ihre Date-Night mit ihrem Ehemann. Auch wenn sie nicht mehr so gut laufen konnte, machte sie sich mit Freude fertig und war immer ganz aufgeregt auf diesen Abend.
Im letzten Jahr war Eva oft im Krankenhaus wegen verschiedener Infektionen. Beim letzten Mal bekam sie einen septischen Schock und war eine Woche lang sehr schwer krank, bis sie am 22. Februar 2026 zu ihrem Herrn Jesus Christus ging. Eva war bis zum Schluss voller Liebe und Fürsorge für ihre Familie. Sie wird uns sehr fehlen und wir werden sie immer im Herzen tragen.
Eva Thiessen, 48, passed away on February 22, 2026, in Amarillo, Texas. She was born on July 12, 1977, in Mexico to Abram and Lena (Enns) Peters.
She had a big heart and always put her family first. She showed her love especially through cooking. Her mind was always full of recipes, ideas, and new ways to make a meal even better. Even after she broke her leg in October 2024 and had to sit a lot, she didn’t stop. From her chair, she continued to tell us which spices to use and how to make anything taste best. Cooking was more than just preparing food for her—it was her way of showing us love.
Eva lived in Mexico for many years with her husband and children. Eight years ago, they moved to Elkhart, Kansas, and she felt very much at home there. She loved spending time with her family, going on trips, and doing things together. She especially looked forward to Saturday nights—her date night with her husband. Even though she couldn’t walk very well anymore, she still enjoyed getting ready and was always very excited for that evening.
Last year, Eva was frequently hospitalized due to various infections. During her last stay, she suffered septic shock and was critically ill for a week before passing away on February 22, 2026, to be with her Lord Jesus Christ. Eva remained loving and caring towards her family until the very end. We will miss her dearly and will always hold her in our hearts.
She was preceded in death by her father, Abram Peters, and her brother, Hans Peters.
Eva is survived by her husband, Franz Thiessen, her daughter, Veronica Neufeld and her husband, Anthony; a son, Pancho Thiessen, a daughter Selina Thiessen; her mother, Lena Peters; three sisters, Anna Thiessen and husband Issac of Mexico, Greta Enns and husband Abram, of Mexico, and Lena Peters, of Canada; two brothers, Pancho Peters, and wife Eva, and Abram Peters, and wife Agatha, all of Mexico.
Funeral Services will be held at the Mennonite Evangelical Church, 116 Somer Drive, Copeland, Kansas at 10:00 a.m. on Saturday, February 28. Interment will follow at the Copeland Cemetery, located at the intersection of Hwy 56 and 3 Rd., in Copeland.
